Curing Process
From the very first moment in which the hams are classified piece-by-piece in order to correctly apply the precise amount of salt that each one needs, our technicians safeguard the production and maturing process so that it fully complies to the most stringent quality parameters.

The know-how that we have inherited from previous generations has been enhanced by utilizing the latest technologies currently at our disposal. The fruit of which is a Ham that stands out from the rest for its distinctive flavour, aroma, look and colour.


A Suitable Climate
BAZA, a town situated in the foothills of the Sierra Nevada and Sierra de los Filábres mountain ranges, is a most privileged location for the curing of our hams, as its altitude above sea level ensures pure, fresh air all year round. The climate of cold, dry winters followed by hot, dry summers gives rise to a microbial flora that simply does not exist elsewhere and greatly benefits good ham.
